The distillery follows many of the traditions of Cognac, including the use of eight French-build alambic pot stills. It also ages its brandy in Limousin oak barrels, encouraging evaporation to intensify the aromas and flavors. What is unique about RMS is its use of six varietal wines for making brandy. These wines are French Colombard, Pinot Noir, Chenin Blanc, Palomino, Muscat and Folle Blanche. The alambic distillation process, derived from old world methods, is subtly adapted to enhance the varietal character of these wines. The result is an alambic brandy that is complex and rich in fruit.
