The Cavallottos have been "vignerons" for 5 generations, in 1948, the family was the first to stop selling grapes to other producers and to start making its own wine. Alfio and Giuseppe, both oenologists, succesfully continue this tradition producing high quality DOC and DOCG wines Vinification: Maceration on the skins in steel vats for 20 days, ageing in Slavonian oak casks of various capacity, for 3 years and 6 months Colour: Ruby red with slight garnet reflections Nose: Intense, ethereal, dried fruit, jam, licorice, violet Flavour: Warm, rich, full-bodied, quite soft, evident but ripe and sweet tannins Serving suggetions: Red meat, typical cheeses, game
